This past weekend was my brother-in-law's wedding in Texas. I
offered to make the cake because the couple is not picky and the design
was simple. This was, however, a huge cake (200+ servings, 4 tiers).
The theme for the wedding was sort of rustic, country chic. The space
was decorated with burlap, lace, and country accents like mason jar
centerpieces. The wedding colors were teal and coral, so I decided to
do little pops of color for this cake using the coral color (gumpaste
flower detail and base ribbon). The cake itself was golden vanilla with
vanilla buttercream and triple berry (strawberry, blackberry, and
marionberry) filling. The groom's cake was German chocolate, with
coconut pecan frosting. I had found a picture of a cute groom's cake on
pinterest that I attempted to copy. My brother-in-law is an avid
hunter. My mom-in-law decorated the deer
with bridal outfits, and I thought her touches (the garter on the
bride's hindleg and the diamond ring on hoof) were hilarious.

I got to learn a new technique via youtube, for a ruffled edge. The balloon is made of fondant and is floating by way of a thin bendable wire placed in the elephant's trunk. I was so excited about how this turned out! I usually feel disappointed with baby shower cakes, for some reason, so I was pleasantly surprised.<br />

This is cartoonish cake for a Red Carpet Theme celebration chosen by the PTO. My son, Spencer, had the idea for this cake. He imagined a stage cake with a runway, the rope divider, and characters stopping to pose for pictures. The characters were school supplies dressed in evening wear and all glammed up for a Red Carpet event. It was a little out there, but I think it was a fun cake and the teachers got a kick out of it.<br />

This year, my family was going to surprise her with a cake for her birthday (I couldn't go on the trip, so I made her a cake and sent it with them with her presents). This was a cake that I came up with all in one day. I had gone to Target to get her presents and found a cute, little stuffed LPS character (pictured below)<span id="goog_1415569456"></span><span id="goog_1415569457"></span>. I decided to turn him into a cake and do some good old-fashioned star-tipping work on it to bring it to life. I could not find an LPS shaped cake pan. I baked a big sheet cake and cut it out, then added cake to the muzzle area to give more dimension. I made the eyes out of fondant. I'm still not really sure what type of animal it is, though I'll bet Brianna does. Anyway, I think it turned out cute & it was lots of fun to make.<br />

While we were there, we had an impromptu celebration for my nephew, Jackson, who turned 17 on New Year's Eve. This was a simple chocolate cake, thrown together with rudimentary supplies. I tried to make it more special by dressing it up with some berries I dipped in chocolate, as this has been a favorite of his since he was a toddler. Today, I made them a baby shower cake for their new little one, whom they are naming "Alice." They requested an <i>Alice in Wonderland</i> theme. The bottom layer is vanilla cake with raspberry filling. The middle tier is a spice cake covered in homemade marshmallow fondant. The top tier is lemon cake with raspberry filling. The embellishments are fondant, and in some places, I used edible gold leaf (watch, book, etc.) I was really happy with how the cheshire cat came out! This took hours and hours to do, but it was a fun project.<br />

My daughter and one of her friends are obsessed with pigs, so we made this pig in the mud cake that has been shown online many times. This is the one that has Kit Kat candy bars all around the sides. It was a yellow cake with homemade chocolate buttercream frosting. The pigs were made of fondant, and the ribbon is a real polka dot ribbon tied around the cake itself.<br />

It is devil's food chocolate on the bottom with butter recipe yellow cake on top. The top tier is torted with a special homemade vanilla mousse filling I made for the first time. I sculpted the monkey out of fondant and the animal cut-outs are also fondant (found pictures online and traced patterns to cut out). The details are piped on with royal icing. The bottom border is ribbon that I wrapped around the base and pinned.<br />

I always avoid them because it's such a high pressure/high stress thing to be responsible for someone's most special day/event in life. I took this one on because it was extremely simple and the couple was very low key. I thought it turned out well and everyone loved it. This was a golden vanilla cake with a raspberry filling, vanilla buttercream, and fresh raspberries.<br />

This week was our Cub Scout crossover ceremony and the theme was "carnival." I made about 100 cupcakes for this and built a cupcake tower using foam core board, hot glue, styrofoam blocks (found at Dollar tree), and ribbon. My husband also put a big dowel rod through the middle to give it added support. The top cake is the Wilton giant cupcake pan, which I frosted and added some details using gumpaste. Ever since we went to California a few weeks ago (Sea World, the beaches, etc.), he is crazy about ocean themed things. He especially likes dolphins now, since we had a special visit with a mama dolphin and her baby at Sea World. He asked for a swimming sleepover at a hotel with an ocean themed chocolate cake. He wanted sea creatures made out of glazed sugar cookies placed around it, as well as dolphins up on the top. At this point, I kind of feel like I could glaze sugar cookies in my sleep :). The sea shells are leftover white chocolates from the luao cake earlier this week. The dolphins, waves, and presents were made out of marshmallow fondant. The white foam and caps of the waves were royal icing. On his actual birthday, I made these orca and angelfish cookies for his class at school. Happy Birthday, Clay!! <br />

The sand on the island is crushed Nilla wafers. The tiki torches are bamboo skewers with Tootsie Rolls on the end and fondant flames. The tiki hut is a jumbo size cupcake with pirouette rolled wafer cookies around it. The thatched roof is light brown buttercream that I piped on with the grass pull-out tip. I used a chocolate mold and white chocolate chips to make the seashells, and then I painted them with edible color dust and vodka.<br />

She loves art and was having an arts & crafts themed party at Michael's. I was excited to finally get a chance to try out a technique I learned in a Wilton class a few years ago-striping. In order to get the multi-colored effect on the shell border, you use a food-safe paintbrush dipped in gel color and paint a stripe down the inside of the bag. This was the perfect cake to use it on. I also had fun sitting down with the b-day girl in advance and watching her sketch out her dream cake for me. Happy Birthday, Savannah!<br />

I was asked to make these special cake pops for someone who is a huge Packers fan. One half are carrot cake with cream cheese frosting (really yummy) and the other half vanilla cake with vanilla buttercream. The details on the helmets are piped in royal icing. These took many, many hours to make, but I think they turned out cute. The cake pop stand was made by the friend who asked me to make the cake pops. Since the couple had tons of little monster items picked out on their registry, I decided to put a monster up on top and put a pacifier in its mouth and gave it a fondant diaper. The funniest thing was the reaction of the person who put all the monster stuff on the registry (daddy to be), who fell in love with the monster on top. Today was my daughter's 7th birthday party, which was a Candyland theme. I just tried to re-create the game board and used sugar cookies on cookie sticks with edible images of the characters. Last weekend I made this little cake and cupcakes for a 50th birthday surprise party. I used the Betty Crocker Bake & Fill dome pan, frosted it in an ivory color buttercream (it looks yellow in the picture for some reason, but was a creamy ivory color in reality). The handle, spout, and lid are shaped out of gumpaste. I painted the knob on the lid with edible gold leaf and then piped a random lacey pattern using the same ivory colored buttercream with dots in between the squiggles, and on some of the dots, I painted the same gold leaf on to give the teapot some interest. I also added some pink drop flowers and ivory colored leaves and vines on various parts of the teapot. I used the large star tip to pipe the pink buttercream on the cupcakes and then made a simple 5 petal flower in a slightly darker pink colored gumpaste and used a gold dragee for the middle of each flower. I made the tea bag tags out of gumpaste and wrote different tea names on each one using an edible marker (ie: "chamomile, Earl Grey, English breakfast, etc.) and the hostess set each cupcake in a porcelain teacup to put around the cake on the table. I poked holes in the gumpaste tea bag tags before the gumpaste dried hard, and then after it dried, threaded some white thread through the hole and let each tag dangle out of the teacup/cupcake. I think they all really liked it, including the birthday girl, who collects teapot and loves tea. Yesterday I made this little stage cake for my daughter's friend who is crazy about Shamu and all things Sea World. Her dream cake, she said, would have a mother and baby orca swimming together. Last night was our son's crossover ceremony for cub scouts and I was asked to make the cake for it. I really struggled with coming up with the initial idea, but once it took root in my mind, the cake was easy to put together. I decided to go with a stage cake for this, so that I could set up a nice camping/scoutlike scene. To make a stage cake, you bake 2 rounds and then cut one of them in half, laying the 2 halves on top of one another so that you have a raised up area on the cake. One of these days I will remember to photograph the construction so that you can see better what I'm talking about. Since the main part of the crossover ceremony is the scouts crossing over the bridge, there needed to be a bridge on this cake. I made this one out of Hershey bars "glued" together with melted chocolate chips. Then I covered the bridge with pretzel rods and piped a chocolate rope across. The corner support pieces are these dark chocolate rolled up cookie things I found at Walmart (it was their generic brand). I cut them in half and pushed them down into the cake. The trees are sugar ice cream cones that I piped with green buttercream frosting. The mountain scape, campfire, signpost, etc. are made out of fondant. The little white rocks are chocolate rocks that I found at Michael's and the larger rocks are jellybean rocks (really really cool) that I found at Toys R Us. I thought they were more realistic looking than the chocolate ones I usually use. The sand is just crushed up graham crackers. This week is Teacher Appreciation week and the PTO asked me to do a cake for it. The theme of the teacher's lounge is "Paris in the Springtime." The black and white cut outs are pieces of the Wilton sugar sheets (they have a pretty black and white scroll). The middle tier has my attempt at chantilly lace (2nd time I've ever tried that). The poodles are fondant cut outs embellished with buttercream piped details. They are my favorite part of the cake and they were an after thought (funny how that happens sometimes). I thought it turned out cute and my daughter could not stop saying "Mom, it's soooooooo pretty." Yesterday was my daughter's end of season soccer party and I was asked to make a cake for the occasion. Since their colors are blue and white and the team name is "Storm," I looked around online and found a logo we liked for a different storm soccer team. I printed out the logo, laid it on top of the cake, traced around the outer edge with a toothpick, and then free-hand piped the rest on in black. Then I came around the black with blue using a slightly bigger writing tip (I think it was the number 3). Around the sides of the cake, I piped each girl's name and jersey number to sort of fill in some of the white space, not realizing that each one of them would want a piece with her name. The coach cut the cake and had to cut in all around to get each one their names, so it was pretty well butchered by the time I saw it :) (I had had to leave the party during the cake cutting portion to go pick up another kid from orchestra practice).
