Last year, one of my husband's best friends wanted to surprise his girlfriend with a romantic birthday surprise. He had planned to take her to Santa Fe for the day at one of those upscale day spas for an afternoon of pampering and then a special dinner at a fancy restaurant. He wanted a cake worthy of a princess for the occasion and this is what we came up with. I made the cake and then he hid it from her on the drive up there and had the wait staff at the restaurant bring it out after their dinner. This was a French vanilla cake with a raspberry filling, iced in vanilla buttercream, chocolate ganache over the top, and then dusted with powdered sugar and embellished with fresh raspberries. I found the little crystal tiara at Walmart in the wedding section for less than $5. Sigh, it was so romantic and he was just so cute about the whole thing...made me kind of miss those dating days.
